By now you've probably realized we do things a little differently at Rise On Shine. Making EVERYTHING from scratch. Donuts only on Saturdays. Made fresh to order. Small batches. Hiring is no exception.
Did you know that I didn't advertise an opening last year, but I knew I was getting to the point that I needed help? I decided that I would share with a few trusted friends and that I would just pray for the right person to come along at the right time. And then Amy came to the trailer. I knew after about 5 minutes of chatting with her that she was "the one". She's outgoing, personable, communicates clearly, genuinely cares about others and service, absolutely LOVES to bake and share love with others through the food she creates, and she is one incredibly hard worker. To say that she was enthusiastic about jumping into the trailer would be an understatement. She brought energy and fun, ideas and a willingness to learn. We affectionately nicknamed her "Grasshopper" because she has embraced every part of this community, business and our success. It is because of her help, support and dedication that we can accommodate the quantity of orders, especially Donuts (!!!), we do now.
Like most things in life, change happens. Amy recently graduated from WSU (CONGRATULATIONS!!!!) and will soon be moving from the Olympic Peninsula to start a new chapter. She is off to learn new skills, experience new places and leave her mark on even more lucky individuals and at least one VERY lucky company. We could not be more proud of her and can hardly wait to see what adventures she has and how she will change the world!
That all being said, I know that I absolutely cannot run Rise On Shine solo anymore. This is a phenomenal "problem" and it's because I had Amy's help that we've been able to grow the business to this level. That means I am looking for a new addition to our family. Here's the thing. As I said in the beginning, I do things differently and hiring is DEFINITELY one of them. This little food trailer has been decades in the making. Before we opened I worked in Customer Service/Hospitality/Restaurant/Healthcare/Retail Management for 15+ years. I have screened, hired, trained, mentored, promoted hundreds and unfortunately, fired a few employees. I knew that when I opened my own business when it came time to hire employees, I would only hire those that met my standards. And I'm being 100% honest, I have VERY high standards. It is incredibly important to me to be transparent and painfully honest about this business, my expectations and the job because it's a relationship.
I met my husband on Match.com almost 10 years ago. People have asked me about that process and the truth is, Ryan was the only date I ever went on in more than 6 months of being on the site. Why? Pretty sure it was my profile. I decided that I wasn't looking to "date", but that I only had time and energy for someone serious. So I laid it all out in my profile; the good and the bad. And I ended my profile intro with "this is who I am and this is who I am looking for. If you don't like what you're reading, don't waste my time." I know, fun huh? But you know what? I may not have had many "winks" or any dates, but when I did, it worked. We started out on the same page and knew what to expect. Sure, we've had miscommunications and disagreements, but we made it through because we started with a foundation of honesty and transparency.
I figured, if it worked for Ryan and I in our marriage then I think there's a good chance it will work for me in business. I'm going to tell you everything, the good stuff and the challenges. One, so I can hold whomever joins me to clear standards and two, so that you can decide honestly if you think you'd enjoy being a part of this adventure. We're both making a decision and it's only fair you know what you're signing up for.
We work in a 20' by 8' trailer with two windows, double stacked convection ovens, four burner range with griddle, two 50 lb fryers, large fridge, small fridge and a small freezer. It gets REALLY hot, especially on a Saturday morning at 5am when we're frying 150+donuts, baking 2 dozen rolls, biscuits, muffins and kringles. We have an industrial vent hood that does a fabulous job, but it's loud.
Cleaning is an obsession. Every surface is repeatedly sanitized throughout the day and counters are organized and cleared constantly. I LOVE my bleach water and get visibly anxious/stressed when surfaces get messy. We wash our hands ALL DAY; every time we touch money, a customers hands, card or any item we haven't personally cleaned and sanitized. There is absolutely no exception for this and will never change or lessen.
We have incredibly strict standards and processes for cleaning utensils/equipment. Every single item is wiped/scraped before washing, rinsing and sanitizing. Again, no exceptions. My septic requirements and ultimately, my business license depend on my waste strength and although it takes extra time, it is done every time. I cannot make this clear enough. Nothing is washed until it has been thoroughly scraped and/or wiped clean.
We make EVERYTHING from scratch and in small batches, which means we're making the same things day after day. We are proud of our quality and are obsessive about making it ourselves. Focus on following instructions, measurements and recipes is the difference between making sales or loosing customers. We have an 8 quart KitchenAid Commercial Mixer that is essentially running non-stop every day. Small space means small batches. We are experts at storage and organizing and re-organizing the fridge/freezer. We stand 95% of the day. We use a stainless steel rolling pin to pound butter, roll tens of dozens of rolls, croissants, donuts, biscuits and kringles. It is physically exhausting.
We change our day-to-day offerings every day depending on the seasons, customer requests and availability of ingredients. I welcome your ideas and creativity. I love to teach and I love to learn, I work very hard to be clear in my instructions and am understanding that mistakes happen. These are opportunities to recognize what we need to do differently next time and make sure we don't repeat the same steps. We work very hard to have open and accepting hearts to feedback, but also being gracious and humble in the delivering of feedback or opportunities for growth. Please understand that I believe this kind of communication can be done honestly and directly, and if done with the right intentions, is not negative.
We LOVE our customers and our community. We remember their names. We know what they like, what dietary restrictions they have and accept their ideas with enthusiasm. We work efficiently and together to process orders as quickly as possible.
We have so much fun. We are "weirdly obsessive" about baking and creating delicious food. We joyously celebrate when someone tries a new item and loves it. We dedicate ourselves to improving an item if it just wasn't right or good enough. We support and encourage each other. We remind one another to drink more water. We love this little business. We are thrilled to meet new friends, visit with regulars, celebrate half birthdays, give out ham snacks to fur babies and laugh when one of us gets a rain bath taking down the canopy.
The truth is, when you stop and think about the best friends and relationships you have, isn't this what makes them the best? It's early mornings, long days, hard work, burned fingers, tired feet, a perfectly risen and toasted pecan roll, hot cup of coffee and a whole bunch of laughter? I'm not searching for an employee. I'm looking for an addition to our family. And our family is in it together, with a lot of grace, forgiveness, and love.
